VFA-101 is based at Eglin AFB/Florida.
So why are they using the NJ tailcode (Pacific fleet) instead of the AD tailcode (Atlantic fleet)?

Purely a guess, i.e. I have nothing to back this up, but as its the FRS maybe they are rolling out the F-35 to the Pacific Fleet first.

Photoshopped. Look close at the front "stars & bars" and the red warning labels at the rear.

My guess as well, the NAVY will be on the turtleback like on CF-01. New USMC squadron VMFA-121 kept their VK tailcode so one can assume -101 will be AD.
