how do you change the sound in the aircraft packages? i really want to upgrade them but the aircraft folder doesn't have a sound folder

Its possible in FSX, but not FS9.

In FS9 there are only a couple of sounds for AI aircraft, one for jets, one for turbines and one for props. You can change out those three sound files to ones that sound more realistic but every AI jet is going to sound the same, every AI turboprop is going to sound the same and every AI prop is going to sound the same because they each only use one sound file depending on their engine type.
In FSX, you can assign individual sounds to individual aircraft. But I'm not an FSX person so I don't know how that process works.

It's dead simple. Just rename the main sound file Soundai & rename the sound cfg file Soundai. Simples

Yep, thats what I did, I think...
Pity I can't double check as my computer died and is currently back with the manufacturer (I had my docs backed up, but not the FS files

)
