What program do you guys use for FS2004 to take screenshots?

I use either the very old Snapper or the somewhat newer Lightscreen (portable version).

I use FRAPS in the main or Snap Shot.

I simply use the "print" key. Then I open any graphics programme (Windows 10 "paint" does it well...) and simply use control + v to import it there. Save it in any format.
Afterwards, I use "Photoscape" freeware to easily rework my shots a bit (size, shape, colour, depth etc.)
