Anyone know where I can get hold of an AI Cheetah fighter plane for FS2004?

Hi Cheetah!
That one: http://www.saafmuseum.co.za/cheetah1235.jpg ?

No proper AI spotted up to date.
If not too many then you can try to convert one or two flyable ones into AI, I'm pretty sure you'll find something on Avsim.com or Simviation.com.
Such as http://www.simviation.com/fs2000military22.htm , page bottom.

I see that Dzerzinsky claims to have an AI Cheetah! I will PM him.

A bit of a late reply... was just browsing the forums when I stumbled upon this thread.... There used to be a payware outfit called AIFD that sold a package of dedicated AI models of SAAF military aircraft that included the following:

Atlas Impala Mk I & II
Cessna C185a
Dassault Mirage F1AZ
Denel Cheetah C
Pilatus PC-7 MkII Astra

As I said, these are proper AI models. E.g. the Cheetah has 3LODs (LOD1: 5429, LOD2: 3607, LOD3: 842). I don't know what happened to AIFD as their site went offline. But the package is cheap and is still available at simmarket:

It doesn't include any flightplans, though. Some of these have been retired by the SAAF, but I created some simple flightplans for those that are still in service, including teh Cheetah. Let me know if you're interested and I'll upload them. I've been meaning to use the Mirage F-1 and PC-7 models for some repaints... unfortunately no paintkits included.
