Go into the .AIR file and change the aircraft type= from a 2 to a 0. That will allow you to select said AI aircraft as a user aircraft and then "fly" it around. Just be warned, AI aircraft DO NOT fly like regular aircraft, the controls are VERY sluggish and they respond very slowly. But that's because they're set up to work as AI. So it's normal, just a bit harder to "fly" them, even for screenshots.
Here's a tip. To get a formation shot with another AI aircraft using the same AI aircraft in the formation, start out by flying formation with the other AI machine using a regular flyable model. Then get into a position that you want to take a screenshot in and select the AI model as your aircraft. Viola..instant formation of two AI machines. Note, make sure the sim is paused when you do this.

You can search for godaired.zip in FlightSim.com files, both Fs2004 and FSX compatible. Find record 105 and change "2" to "0". Save and exit. That won't affect AI flight dynamisc but only show every (AI) aircraft using that air file.
You can also use Ctrl+W to change in spot view to any AI aircraft loaded by the FS engine. Use Ctr+Shift+W to go back.
Traffic View Board is the best choice, no hack in Air File, but don't forget to increase the scan range, otherwise, TVB won't load all AI in range. With TVB, you have specific datas about any AI and you can easily select the plane you want to spot. The drawback is that you have to wait for the AI to depart before spotting it in movement. And last, you can't control flaps, gears (..) all that is set by the AI engine.
Sometimes, I just want the AI in specific positions impossible to get with just spotting, that's why I'm used to tweak every new AI files while installing a new model, by setting two air files, the classic one that hides the aircraft like OSP_ATR425_Hidden.air, and another like OSP_ATR425.air to get it visible in aircraft selection menu. I just change in the aircraft.cfg file to get FS showing it or not.

You might want to try AI-Aircraft Editor, which allows to change an AI Aircraft to flyable (and vice versa) easily. The program is bundled with ADE (Airport Design Editor) since version 1.40.0.
