Does anyone know which C-17 package has the Hummers which enter and exit? Also, I heard some C-5s might be made to carry Apaches and cannon etc. along with/instead of the VIP lemos. Does anyone know where I could find those C-5s?

Yes. 
The C-5's you shall have soon enough. For the C-17's you can download the base model from the Project AI site along with several packages for them. Also the MAIW Elmendorf AFB V2 package has the C-17 model you are looking for.

As for the C-5 with the Limo, you can get it in MAIW's Andrews AFB/Air Force 1 package.

The updated C-5's will have many more variations to choose from as well. Similar to the PAI C-17s.
