Yep,

On my last ride I was lucky and even had one of the seats with nobody directly across from me.

Sure is, you can tell it from the internal fuel tank in the wing spar, which can be seen in the ceiling. And the gantry at the front there which you can look down from the cockpit into the cargo bay. Lovely cargo bay, spent many an hour crawling around in there under pallets and vehicles.

Is it true that a whole Stryker AFV can be swallowed by a C-17?!?

Well I dunno exactly but I reckon there's no reason why not. A C-17 will take a Chinook quite easily.
