I made a truck with FSDS 3.5.1 and using FS2004. Where does a person begin learning how to make a aircraft.cfg and a air file? I can not imagine copying and pasting. Is there some default empty form that has all the required air text to be filled in, as a example?
Not having any luck scanning the internet for tutorials on this subject.

You literally take the default C-172 .cfg and .air files and start making changes, then check the changes in game, then make more changes and check the changes in game. Repeat until you are happy with how your model behaves.

If you want to make a jet, you use one of the default jets .air and .cfg files as your base and then make alterations as needed. If you look at some of the early AI models, they use the default .air files right from Microsoft.

If you want to make a turboprop, use the default King Air files, etc.

If you want to make a ground vehicle, start with the C-172.

That's literally how it works.

There are tutorials out there, nothing specific to AI but there are a few out there if you look.

I appreciate the encouraging words. Trying to make this thing drivable is going to prove interesting.

One step at a time.
For driving you will need an fde, exactly like if you were designing a plane. For your testing the simple thing is to use one that is similar to your vehicle, again like a plane. Make sure that you choose an AI or non-AI specific fde according to your needs.

Of course, you won't be able to distribute it unless you get permission to include the fde with your model, but worry about that later on.
