Maybe A nice RAF Fairford airshow package would be good?
Be interesting

I've done it before. I never perfected it and it wasn't based on any one RIAT, but I did do a decent job of represnting it. The main problem you find is the sheer amount of movements you have to program means that arrivals are extremely difficult to sort out without ATC problems.
