What are they? Are they better to use these if you have a lot of files for AI Aircraft?

They work like LODs in the model. A series of smaller textures are generated from the main one, each one diminishing in pixel size that appear over the viewing distance range. So yes, particularly if you are viewing an AI flight line or when a whole airfield is in sight, mipped textures will give better performance overall. They are also used in the scenery textures in most cases.
