I, too, was wondering about AI with working tail-hooks and folding wings, and thanks to you I now have the answer.
Although MAIW provide a marvelous fleet of AI planes to pick from, the list is still finite and limited.
The one thing I have learned from Nick Black and the MAIW forums is that AI aircraft must have a LOW polygon count.
We can't expect MAIW to create models for every military plane in existence or that ever existed...
But there is a vast library of LOW poly models - albeit without tail-hooks or folding wings - that I discovered accidentally:
Many FS98 military aircraft
can be used as AI in FS2004.... I can vouch for that.
Anybody who's looking for LOW poly models to use as AI and can't find them in any MAIW package, can browse through FS98 aircraft libraries.
Don't take my word for it....try it and see!!
