I am having a problem with GMAX and the boolean cuts. When I tru to do a cut in a face, it winds up shattering the face and adding a dozen more polygons than were there before. I then have to go behind and redraw the face around the cut I had made. Is there a wa to keep this from happening, or am I just stuck with an extra step?

The object you are cutting has to have all its faces intact.
The program will create funny shapes or partial cuts if you have deleted faces on the object.
The way to go is, do the Boolean cut early and then extrude faces to get your desired shape if the Boolean cut does not work on your completed model.

Sorry, jumping around here.
Make sure the models are in element mode. Both the wanted shape and the tool.
It will some times change the face orientation and you may have to flip it. The basic house tutorial shows you how to do it.
Hope this is of some help.
